He comes to serve with elegance and wine
The rich and mannered folks who come to dine
In New Orleans
And all the while I wondered
What the waiter eats at home.

He brings the tastes and glow of Cajun food
In courtyard restaurants to those who seek the mood

6.22.2023: I interviewed the poet for The Denver Catholic Register about 27 years ago. He was a lawyer with a penchant for verse. I have both of his poetry books. He gave me the first, and I found the second in one of Denver’s used book shops.
